Observation (CORRECTED DURING INSPECTION): No chlorine based sanitizer buckets to measure between 100-200ppm available to sanitize food contact surfaces. Observed staff to be warewashing equipment with just water.
Corrective Action(s): Prepare chlorine based sanitizer bucket to measure between 100-200ppm. Educated operator on manual warewashing using 3-compartment sink. Presented operator with 3-compartment sink method poster. All equipment must be washed, rinsed, sanitized, air dry from 3-compartment sink.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink available for manual warewashing.
Prep cooler and domestic stand-up cooler compartments measured at 4C or lower. Domestic stand-up freezer compartments, chest freezer measured at -18C or lower. Hot-holding unit measured at 60C or higher.
Meats undergo secondary cooking step via microwave.
Exhaust hood vent sanitary condition.
No signs of pests observed.

Overall, facility is well organized and clean.
