Observation: Observed food scraps around and on the outside organic waste and garbage bins and grease build up was also observed under grease waste bin. Observed a large number of rodent droppings in the garbage areas and a large number of rodent burrows on the north and west side of the building.
Corrective Action(s): Thoroughly clean and maintain the garbage areas. Clean all trenches, compactors and the concrete around the garbage areas.
Eliminate access to food supply by cleaning the trenches and using wire mesh where applicable to prevent access for rodents.
Take steps to destroy rat harbourages. Discuss methods with your pest control company. This is to be carried out immediately.

Observation: Floors in produce area are cracked and have ponding of water.
Floors in meat cutting room have ponding of water and are not draining to floor drains.
Corrective Action(s): Address these floors so that there is no ponding of water and that they are smooth and cleanable but non slip. To be corrected within 2 months. Mop floors regularly to prevent eliminate ponding of water until it can be addressed.

Comments

All coolers throughout store are maintaining foods at 4 degrees C or colder.
All freezers are maintaining foods at -18 degrees C or colder.
Liquid soap and paper towel in dispensers with hot and cold running water in all departments.
Sanitizer at sink dispensers measured a 200 PPM quat residual in all departments.
Dishwasher in bakery currently not in service due to it leaking during its cycle. Service call has been made. Staff are manually washing dishes using the three compartment sink technique.
No signs of pests in the store during inspection.
