Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer solution in buckets with wiping rags measured at 0 ppm. The solution was made the previous night.
Corrective Action(s): Ensure that a new chlorine sanitizer solution is made every 2 hours or as needed. Obtain chlorine test strips to check concentration daily to ensure it is between 100-200 ppm. Operator made a new chlorine bleach solution during the inspection, measured at 100 ppm.

Observation: 1) Food not properly covered in the walk in cooler and in prep coolers. This a repeat violation.
2) Overstacking of food containers without lids or coverings
Corrective Action(s): 1) Properly cover all food with lids to prevent contamination from occuring. This should occur throughout operations and not only at the end of the night.
Correct by: Immediately
2) No overstacking of containers should occur without a proper covering on the containers as it can introduce containmination from the bottom of the container into the food. Operators moved the containers during the inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease and food debris build up underneath all equipment and hard to reach areas in the kitchen. This is a repeat violation.
Corrective Action(s): Proper cleaning of the premises must be conducted to remove all grease, debris, and clutter to ensure facility is maintained in a sanitary manner. Follow the cleaning schedule outlined in your sanitation plan.
