Manager had a valid temporary FOODSAFE Level 1 refresher course certificate on-site dated July 29, 2018 (actual certificate valid for 5 years upon the date of issuance).
A binder with FOODSAFE certificates of the cooks was available on-site.
Handsinks in the kitchen, front service area, and staff washroom were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Walk-in-freezer and upright freezer were at or below -18 degrees C.
Hot-held food was at or above 60 degrees C.
Dishwasher final rinse chlorine sanitizer residual was at 100 ppm (minimal of 50 ppm is required) at the plate.
100 ppm chlorine sanitizer was available inside buckets with wiping cloths near the food prep area.
200 ppm QUATS sanitizer was available inside a spray bottle for the dining area.
No signs of recent pest activity were present at the time of inspection.
Dipper well was turned on during the inspection by the Manager.
Ice storage bin and meat slicer was in a clean condition at the time of inspection.
Meat slicer is disassembled and then the blade placed through the dishwasher according to the Owner/Operator.
