Follow up inspection:

The following items have been corrected:

A different hot holding unit was brought into the restaurant and it was reaching > 60 C.
Most of the droppings have been cleaned.
Both kitchen hand washing sinks have soap now.
The ventilation hood has been cleaned and foil has been removed from shelving.
Light covers are not needed in the kitchen, since the lights are all LED's.

The following items require correction this week:

Provide a report from a professional pest control company as soon as possible. The operator stated that a professional pest control company will be onsite on Thursday.
Seal the hole in the wall behind the walk in cooler, where there is insulation on the ground around the area.
Check for and seal any other entry points for rodents, as determined by the pest control company.
