Observation: Dishwasher Rinse gauge is not in good working order. Repair and/or adjust unit. Calibration may be required.

* Most operations operating at the premises and YVR PREP state that minimum wash and rinse temperatures are monitored to verify that unit is operating properly. Operators are unable to monitor and verify that unit is working properly and that Rinse temperature reaches 82 deg.C to adequately sanitize dishes/equipment/utensils.
