Observation (CORRECTED DURING INSPECTION): Refer to Code 308.
High temperature dishwasher is not able to properly sanitize the dishes.
Corrective Action(s): Required operator to use the dishwasher for washing and rinsing but sanitization step must be completed manually in the large tub sinks in the other room. Ensure to fill up the sink to submerge all utensils under water. Residual chlorine should be 100 ppm for adequate sanitization. Once the dishwasher is repaired, resume using the mechanical dishwasher for all three steps.

Observation: Observed droppings and a dead mice in the basement storage space. Huge improvements made since previous inspections but still need more work.
Corrective Action(s): Required operator to conduct regular cleaning and work with the pest control company to minimize pest activity as much as possible.

Observation: Dry storage area had food spill on shelves and on the floor. These are the main sources of food for pests and should be cleaned up immediately.

Observation: Observed high temperature dishwasher not able to maintain 71 C at plate level after final rinse cycle. Two different probe thermometers were used to measure the temperature of dishwasher; all came out at around 58.7 C.
Corrective Action(s): Required operator to call the technician repair the dishwasher immediately.
