Observation (CORRECTED DURING INSPECTION): 3 containers of sauces observed cooling by the side door on the floor. Internal food product temperatures still well over 74 degrees C.
Corrective Action(s): Ensure all food is cooled in an acceptable manner. Do not cool food products on the floor. Transfer large quantities of sauce to smaller containers and use ice wands to facilitate cooling. Cool from 60 to 20 degrees C in 2 hours then from 20 to 4 degrees C in 4 hours.

Observation:
Several food containers in the walk in cooler stored on the floor.
Several food containers observed with proper covers in the walk in cooler.
Corrective Action(s): Ensure all food products are protected from contamination by storing them at least 6" off the floor and with proper covers. Correct immediately.

304 - Premises not free of pests [s. 26(a)]
Observation: Some mouse droppings observed in the dry storage area. No mice caught in the glue traps placed in the dry storage room. Pest control report indicated mice caught in the bar area.
Corrective Action(s): Continue to work with the pest control company to address the mouse issue. Identify and seal any potential pest entry points. Clean all hard to reach areas on a regular basis and clean any spills of food quickly. Do not allow water to pool in the dishwashing area.
