Follow-up inspection
Hand washing sink equipped with hot/cold running water, liquid soap and single-use towels.
Hot holding of sweet and sour soup was 60 C or above. Operator stated soup is being reheated in microwave - ensure soup is always reheated to 74 C prior to placing in hot holding unit. Thermometer available to monitor temperatures.
Surface sanitizer available - bleach at 200 ppm. Unscented household bleach on site.
Walk-in cooler more organized.
No longer keeping leftover canned food in the can.
General sanitation has improved however hard to reach areas (between equipment) still require cleaning.
