Observation (CORRECTED DURING INSPECTION): Deep, large volume container of rice stored in walk in cooler. Internal temperature measured 23 degrees C. Owner stated that rice had been cooked the night before.
Corrective Action(s): Rice was discarded at time of inspection. Rice and other potentially hazardous foods are to be cooled from 60 degrees C to 20 degrees C within two hours, and 20 degrees C to 4 degrees C within 4 hours to limit the growth of potential pathogens and/or toxins, which may not be destroyed by reheating. Use one or more of the following methods to facilitate rapid cooling: cool in shallow containers, add cold water or ice, store in ice bath with stirring, use an ice wand. Storage in a freezer may also be used to supplement these methods.

- New under counter cooler has been purchased for cook line area. Temperature at 1 degree C.
- Food in walk in cooler is properly covered. Raw meats are not stored over ready to eat foods.
- Ice scoop stored safely in clean container
