Low temperature dishwasher was measured at 48 degrees C and 100 ppm chlorine in the rinse residual at the utensil surface.
Quaternary ammonium compounds (quats) sanitizer was measured at 200 ppm in labeled buckets.
Internal food temperature of maketable items probed at 2 degrees C.
Doors and door seals of maketable cooler in sanitary condition.
