Observation (CORRECTED DURING INSPECTION): Around 40 slices of processed cheese was observed on top a container of ice cubes in front of the flat top grill. Ambient temperature is about 12C. Staff said that the cheese was removed from the cooler around an hour ago. Restaurant was not busy at the time of inspection
Corrective Action(s): Potentially hazardous foods (e.g. cheese, meat, sliced vegetables, etc.) must be stored at 4C or below to prevent the rapid growth of bacteria and/or formation of toxins that could lead to foodborne illness.Small inserts of potentially hazardous foods may be held room temperature for a maximum of 2 hours, then discarded after.

Observation: There is no hot water available at the hand wash station located across the 3 compartment sink. When the cold water faucet was turned on, water was leaking from the pipes.
Corrective Action(s): Ensure there is hot running water available to facilitate proper hand washing practices. Contact maintenance to repair the hot water faucet and repair the leaky pipe. A pooling of water on the floor can attract pests.

Operator said maintenance is arriving tonight or tomorrow morning to repair the leaky pipe and hot water faucet.

Observation: 1. The hand wash station located across the 3 compartment sink has no running hot water and a leaky pipe.
2. The hot holding unit next to the prep cooler is not working. No food inside hot holding unit at the time of inspection. Operator said the knob to turn on the unit was broken. Operator was aware about this issue and said that maintenance was notified and will be onsite to repair the hot holding unit on September 17, 2022.
Corrective Action(s): 1 and 2. Ensure the hand wash station and the hot holding unit is repaired ASAP.

Comments

Routine inspection conducted. The following observations were noted:
- 2 hand wash stations at the front of house has hot and cold running water, liquid soap, and paper towels
- QUATS sanitizer at the dispenser by the 3 compartment sink and inside buckets is 200 ppm.
- Temperature of the high temp dishwasher reached 89.6C at the plate level upon final rinse cycle
- Walk-in cooler is 4C or below
- Cooler drawers under the flat top grills are 4C or below
- Prep cooler (**on defrost cycle**) has an ambient temperature of 8C
- Freezer temperature is -20C
- Gravy, chilli, and bacon are hot held in metal inserts which are placed on top of the flat top grill. Temperatures are over 60C.
- See Violation Code 308 about hot holding unit.
- Thermometer available on site. Ensure to monitor the temperatures of the hot held items hourly to ensure they are over 60C
- Temperature logs are conducted twice a day
- All food items are stored at least 6 inches off the ground
- General sanitation of the facility is satisfactory

Follow up inspection will be conducted later this week and the following week to ensure the hand wash and hot holding stations are repaired.
