Observation (CORRECTED DURING INSPECTION): The sanitizer bottle did not have any sanitizer in it; cloths were being stored in water only.
Corrective Action(s): Label the sanitizer bottle and ensure that the solution is refreshed regularly. All wiping cloths must be stored in a sanitizer solution.

Observation: 1)Curries in the display cooler in the back are uncovered.
2) In use utensils were stored in water over the stove. Water temperature was 24 degC.
Corrective Action(s): 1) All foods must be covered so that they're protected from contamination.
2) Store in use utensils in ice water or in hot water that's above 60 degC. Once the stove is turned off, dump the water out. Wash/replace in use utensils every 4 hours.

Comments

General Comments:
Coolers were below 4 degC
Freezers were below -18 degC
There was no hotholding being done at the time of the inspection
Foods were being cooled and were around 35 degC before being placed inside the coolers.
Operator had FS level 1 equivalent certification
Temperature logs were maintained for August. START RECORDING TEMPERATURE AGAIN DAILY.
Handsink was fully equipped
Discussed dishwashing procedures. No concerns noted. Sanitizer level in the 3rd sink was at 200ppm.
