Observation: The following observations were noted before the premises was about to open to the public.
- All food contact surfaces including countertop and walls around it were not maintained in a sanitary manner
- Mould was observed in the interior of the ice machine
- The racks in the walk-in cooler were filthy
- The scoops in flour/rice etc. containers were not washed and sanitized before use
Corrective Action(s): Clean and sanitize the noted areas and items. The kitchen is to be stay closed until all corrective actions have been resolved.

Observation: No handsop and paper towel in place at the handsink in the bar area.
Corrective Action(s): Ensure that all handsinks are maintained with hot & cold running water, liquid soap and paper towel

Observation: - Shelves under the handsink had accumulation of debris and filth.
- Severe buildup of ice noted in the walk-in freezer
- Spilled flour was not cleaned up in the dry storage
- Painting is peeling off in the dry storage area
- Ceiling in the kitchen is turning yellow and black
Corrective Action(s): - Clean and sanitize the area under the handsink. DATE TO BE CORRECTED immediately: August 21st, 2017
- Remove the build up of ice in the walk-in freezer. DATE TO BE CORRECTED immediataely: August 21st, 2017
- Clean up the dry storage area. DATE TO BE CORRECTED BY: immediately
- Re-paint the dry storage area. The walls shall be smooth, non-absorbent and easy to clean. DATE TO BE CORRECTED BY: October 1st, 2017

Comments

- Temperatures for coolers and freezers were adequate
- The operator was putting potentially hazardous foods over ice for the cooler that was not able to keep temperature <4C
- Hot holding >60C
- Low temp dishwasher achieved 100ppm chlorine at final rinse cycle
- 200ppm QUAT sanitizers present
- No signs of pest activity
- Attention to sanitation required
