Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Mechanical dishwasher final rinse does not reach required sanitatizing temperature 71C on the dish surface.
Correction: Repair the mechanical dishwasher so that final rinse temperature reaches at least 71C or 160F on the dish surface. Record the temperature daily and keep the temperature monitoring log on-site.

Code 302 corrected.- Dishwasher final rinse temperature measured at 72.4 C. Good!

- Reminders:
Obtain a waterproof thermometer to monitor final rinse temperature at mechanical dishwashers.
Ensure to maintain a temperature monitoring log. And, measure/ record final rinse temperature at the dish surface once a day (must be at least 71C/ 160 F).
Keep the monitoring log on-site and updated.
- Water leak in chemical/mop room has been addressed. The room has been cleaned and floor was dry at the time of this inspection. It was observed that there is condensation from freezer piping.
Please ensure scheduled clean-up and monitoring for the area in order to prevent water pooling on the floor as well as monitoring for potential mold growth.

No other concerns noted at this date.
