Observation: Large accumulation of food debris and dirt under equipement, tables, and other hard to reach areas.
Corrective Action(s): Clean underneath the mentioned areas. Ensure to stick to a regular cleaning schedule because these conditions may lead to a pest problem. Orkin claims there are mice coming from outside and going to the bakery department. There were a couple caught in the traps in the bakery department.

3 compartment sink available with Quat used for sanitizing step.
Sanitizer buckets readily available with 200 ppm Quat.
Cooler temps operating at or below 4 degrees C.
Freezer temps operating at or below -18 degrees C.
Pest management in place - Orkin employee claims that some mice were caught in traps in the bakery department.
Ensure a proper cleaning schedule to avoid a pest infestation. Also, it will make it easier to differentiate between food debris and mice droppings if there is a pest problem.
