Improvements noted to general sanitation in hard to reach places as noted from previous inspection.
Dishpit floor and walls much cleaner and area substantially dry. Keep an eye on the double prep sink area for water build up as discussed. No biomat or slimes noted anywhere. Good.
*Make sure to empty any overflow bucket around the drain pipes as discussed.

Walk-in freezer is better. Floor is cleaner.
*Make sure the ice wands are kept off the floor at all times. Place on shelves or hang on hooks as alternative.

Cooling units all less than 4 C.
Freezer at -18 C.
Hot holding in service trolleys at 60 to 61 C when stirred. OK.

Dishwasher at 50 ppm chlorine and quats auto feed for sani-buckets at 200 to 400 ppm range. Good.
*Make sure water temperature is blended at luke warm for best results.
Handwashing stations all stocked and ready for use.
No signs of pest activity at time of inspection.
NOTE: Approaching fruit fly season - attack exposed floor drains or similar to reduce breeding potential in these environments as discussed.
