Observation: 1. Damage (possible mouse chewing) noted to door sweep under dry storage room door. Gap created to allow additional entry into room via under the door for a mouse. Operator has called for replacement. Noted on Dec 12, 2019 pest control report as an issue.
2. Caking powder bags, pudding bags and Jell-O mix bags noted in dry storage room on shelves. Recommendation by pest control to place food in pest proof containers to avoid attracting pests.
Corrective Action(s): Ensure all recommendations by pest control services are followed to protect premises from attracting pests or allowing pest entry.
1. Replace rubber door sweep to prevent pest entry. Recommended a thicker/stronger material that can not be easily chewed through by mice. Possibly metal or thicker plastic as the floor is level and smooth. Door sweep was identified as needing replacement back on Dec 12, 2019 and still has not been replaced. This must be addressed and actions must be taken immediately.
2. Place all bags, food packages into pest proof containers (plastic or metal) with a lid to protect food and attracting pests.

Educate staff about mouse activity and what to watch for and why food must be protected. Have a reporting system in placed to inform food managers and then pest control to take action.

- Walk in cooler: 3 C
- Walk in freezer: -15 C
- Beverage undercounter cooler: 4 C
- Front beverage standing cooler: 3 C
- No hot holding noted during inspection
- Good food storage practices; ready-to-eat foods above and separated from raw meats; foods protected and stored in containers covered, labeled and off the ground
- Sanitizing solution at dispensing unit and in buckets 200 ppm QUATS
- High temp dishwasher noted at 73.5 C at plate level; over 192 F at gauge
- Staff had designated food handling tasks to prevent cross contamination
- No sign of pest activity observed during inspection; a pest control company provides services monthly
