Observation (CORRECTED DURING INSPECTION): Mandolin was found to have dried food debris under the blade.
Corrective Action(s): Ensure the slicer is properly disassembled for cleaning and sanitizing after each use. Slicer was cleaned and sanitized at the time of inspection.

Comments

-Sushi cooler was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Both sushi customer display coolers were at 4C.
-Chest freezer was at -18C.
-Hot holding was greater than 60C.
-Sushi rice had a pH of 4.0.
-Cleaning and sanitizing carried out in the 3 compartment sink. Quats sanitizer was tested at 200ppm.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle was labelled and tested at 200ppm.
-Bleach sanitizer spray bottle was clearly labelled and tested at 200ppm.
-Cutting boards sanitized after each order.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until FEbruary 20, 2024.
