Observation: Two hand wash stations are unable to supply hot water. Operator explains that the boiler is not supplying hot water due to the high demand of the dishwasher and the other working sink.
Corrective Action(s): Both hand wash sinks must supply sufficiently hot water in order for employees to adequately wash their hands. Use the 1 available sink for hand washing until the other sinks are supplied with hot water.

Observation (CORRECTED DURING INSPECTION): Onions were observed to be placed directly on the ground. Operator was notified and he directed staff to immediately place the bag of onions above the ground. The onions were placed above 15cm.

Observation: Cooler fans in the walk-in cooler require cleaning due to build-up of dust.
Corrective Action(s): Ensure the cooler fans are cleaned to avoid blowing of dust onto food items and possibly leading to contamination. Ensure the fans are cleaned on a more regular basis to avoid buil-up.

Routine inspection conducted.

-Walk-in cooler and prep coolers are at 4C
-Both freezer units achieve -18C
-Dry storage is adequate. Ensure all foods are stored above the ground.
-Low Temperature Dishwasher achieves 50-100ppm chlorine. Test strips are available
-Spray bottle containing QUATs solution achieves 200ppm. Ensure all bottles are labelled.
-No signs of pest activity

Follow-up inspection to be conducted on Jan. 27, 2022, unless operator contacts inspector earlier when issue has been resolved.
