Multiple eggs are broken and combining in a container well in advance of service (1 day supply). Corrective Action(s): Pooling eggs are only allowed if it is for a single dish prepared for immediate consumption. Break eggs just before cooking unless they are intended to be fully cooked such as in cakes, or alternately, use pasteurized eggs. Violation Score: 5

Correction: Store smaller quantities of whole shell eggs at room temperature and use more ice to keep eggs cooler. Store eggs in cooler when not in use. Code 401 noted on Routine inspection # 245703 of Apr-26-2019 Adequate handwashing stations not available for employees [s. 21(4)] Observation: Staff washroom does not have liquid soap in dispenser. Correction: Ensure liquid soap is refilled so staff can wash hands.

General sanitation is good. Handwashing stations are satisfactory. Sanitizer is detected in dishwasher rinse cycle. Temperature of refrigeration is satisfactory. No obvious signs of rodent noted.
