Inspection after 10 days closure due to COVID cluster
*Hand sinks equipped with liquid soap and paper towels. Hot water available.
*Sanitize (quats) available at 200 ppm - in spray bottles and 3rd compartment sink in ware washing area.
*Temperature checks:
- Walk-in freezer was at -15.9 deg C (door left open; ensure door is closed properly at all times).
- Walk-in cooler was below 4 deg C.
- Line freezers were at -9 deg C (quick turnaround).
- Line coolers were at or below 4 deg C.
- Hot holding for meat, gravy, chilli was above 70 deg C.
