Observation:
There is an opening around an electrical outlet in the dry storage room which could be an entry point into the premises. Droppings found in the dry storage room around the computer and the cords.
Corrective Action(s):
Block all openings and holes in walls and around electrical outlets and pipes to prevent entry of pests.

Observation:
There is a build up of grease and food debris on the floor under the deep fryers. This will attract and supply a food source to pests.
Corrective Action(s):
The floor shall be cleaned at the end of the each day.

Observation:
Rodent bait boxes placed in food processing and storage areas of the premises. Bait boxes contain poison which is a chemical that could get in food.
Corrective Action(s):
Immediately remove and discontinue using chemcial/bait methods to eliminate the rodents. Only mechanical means (snap trap, catch-all-traps, glueboards) shall be used in food storage and preparation areas.

Observation:
There are unused, broken or excess items (equipment, speakers, containers, etc) being stored on the premises. These items are never moved or cleaned, which will harbor/encourage pests to remain or live around these items.
Corrective Action(s):
Remove or discard all unused, borken or excess items from the premises immediately. This will eliminate hiding areas and will allow and mke it easier for all areas to be cleaned.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or below; freezers -20C or colder; hot holding units 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle was 74.9C at the plate's surface as per max/min thermometer.
- Glasswasher rinse cycle had [Cl2] of 50ppm. Have this concentration checked when the machine is serviced.
- Quats sanitizer in spray bottles was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in durable pest-proof containers; secured with lids; date coded; labeled; in groups with proteins on lowest shelf; and 6" off the floor on shelves.
- FoodSafe certified staff present.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Improve in the mentioned area and keep up the routine.
