Observation: Low temperature dishwasher - last cycle is not supplied with 50ppm of bleach as per sanitation procedure.
Corrective Action(s): At the present time - please utilized your 3 compartment sink for manual dishwashing ( larger equipment ) and add manually chlorine in the last cycles.
Also, check that dishwasher is following the rinse/wash/ sanitize cycle.

Comments

At the time of inspection we conducted inspection of the main kitchen and the kitchenette area on 1st floor.
However, just learned that the 2nd floor has some additional food serving area. ( on the west side). Agreed with operator to provide us with more information during our next inspection. All food is still provided from this main kitchen site.
1st floor - snack was served at the time of inspection
Temperature's of cold storages are measured at below 4C
They are operating in almost full capacity.
Main kitchen - low temperature dishwasher - supplied with 10ppm of bleach ( see violation 301 )

Kitchen Manager - has his Level 2 Food Safety training

Follow up inspection will be conducted due to 301 violation.
