Observation:
Food debris and dust accumulating on the wall below & behind the cooking pot station; on the ceiling air diffuser and upper walls above the dishwasher; and the walls below the 2-comp sink drainboard.
Corrective Action(s):
Immediately clean these areas to remove the accumulated food and dust. Add these areas to the cleaning schedule, so they are routinely cleaned to prevent food from accumulating and attracting mice and flies, and to prevent dust from falling into food or on clean dishware.

Comments

A routine inspection was completed:
- Front u/c cooler 4C; front display cooler 4C; upright cooler 4C; upright freezer -21C; front chest freezer -18C; and thermometers present.
- A new high temperature dishwasher has been installed. The dishwasher had a rinse cycle temperature of 74.5C at the plate's surface as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; labelled; and foods stored 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Staff are continuing to maintain the sanitation level, keep up the good work.
- Ice machine is clean and in good working order.
- All food containers, lids, equipment, and surfaces are in good working order.
- No signs of pests. Mechanical traps placed out to monitor for pests.
- Bleach sanitizer in spray bottles and cloth bucket had [Cl2] of 200ppm.
- Valid, FoodSafe certified staff present. Certificates present.
- The faucet, at the front rinsing out sink, is still secured and sealed to the counter top.
- Valid health permit and decal posted.

ACTION
Clean the wall beneath and behind the table holding the cook pots; clean the ceiling air diffuser and upper walls above the dishwasher; and clean the walls beneath the 2-comp sinks drainboard. Add these areas to the cleaning schedule, so they are done on a routine basis.
