Observation (CORRECTED DURING INSPECTION): Back packaging room lacks food-grade sanitizer. Dough and other chickpea products directly contact the prep table surface.
Corrective Action(s): 200 ppm chlorine residual was prepared in a bucket at time of inspection. Food-grade sanitizer is required since food is being handled.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station in secondary kitchen (packaging area) lacks paper towels.
Corrective Action(s): Hand wash station stocked with paper towels at time of inspection. Paper towels are always required as part of proper handwashing.

304 - Premises not free of pests [s. 26(a)]
Observation: Substantial number of rodent droppings along back corners of garage area for storage of bulk-packaged goods such as flour. No evidence of breach in any of the dry storage packaging at time of inspection.
Corrective Action(s): Thoroughly saturate rodent droppings with a 1:10 dilution of bleach (1 part bleach, 9 parts water) for 20 minutes. Wipe down rodent droppings with paper towel and place into a secure garbage receptacle. Contact professional pest control company to do a thorough inspection of the garage area, and reset traps as needed.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Front Gulab Jamun hot-holder: 70C (Min: 60C)
- Display cooler at 4C
- Front display freezer at -18C
- Walk-in cooler (main kitchen) at 2C
- Walk-in cooler (secondary kitchen) at 4C
- Stand-up freezers in secondary kitchen at -18C or below.
- Temperature logs are NOT up to date. Last logs were taken on September 15. Ensure that logs are taken each day
- Coolers equipped with accurate thermometers
- Sweets with dairy products: rasgulla, rasmulai, and gulab jamun are all under proper temperature control

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in main kitchen and restroom (NOT the secondary kitchen - see violation code 401 above)
- Sanitizing pail present in main kitchen at approximately 200 ppm chlorine residual
- High-temperature potwasher sanitizes at final rinse cycle of approximately 73C at the plate. NOTE: Do not run the pot washer unless the rinse tank temperature exceeds ~ 185F. Wash pressure at approximately 40 PSI at time of inspection
- Utensils, knives, and spreaders / spatulas generally maintained in good sanitary condition
- Ventilation slats well maintained

3. Storage
- All food items are stored at least 6" off floor
- Bulk food items in garage are elevated off the floor via pallets and are present inside original packaging. No open food items inside garage

4. Administrative
- Supervisor has FoodSafe 1 (Expiry: May 2023). Reminder: Rest of staff have FoodSafe taken on or before 2011. In the absence of owner or supervisor, at least one person needs to be on-site with valid FoodSafe 1 certification. It is recommended that the other staff members renew their FoodSafe 1 at www.foodsafe.ca > Level 1 Refresher
- Permit posted. However, decal is still from last fiscal year and is no longer valid. Records indicate that nothing is owing; therefore, please ensure that you paste the most recent decal on the permit by next week

5. Pest Control
- Orkin contacts inspections every 2 weeks. Please contact pest control company to address deficiencies in the garage

The following requires your attention:
- Ensure that proper lids for your bins at the secondary kitchen are obtained, rather than covering it with an aluminum baking sheet. Remember that only scoops are permitted inside the dry storage bins
- The interior of the freezers in the secondary kitchen (at the bottom) could use further cleaning
