Observation (CORRECTED DURING INSPECTION): REPEAT OBSERVATION: Walk-in cooler contents measured 4 to 11 C at the time of inspection. meats were brought in frozen from Richmond commissary and defrosted in the walk-in cooler
Corrective Action(s): Moved potentially hazardous foods into walk-in cooler of neighboring unit (Royal Tandoori). EHO determined that prep cooler is adequate for running facility operations for a temporary basis

Observation: REPEAT OBSERVATION: 1 dead mouse found in trap underneath the 3 compartment sink. Some minor rodent droppings observed in the staff washroom
Corrective Action(s): Have pest control come and service the unit for the catch. remove the rodent droppings from the staff washroom and sanitize area using a 100 ppm chlorine bleach solution.

Corrective Action(s): moved PHFs to a working cooler. operator indicated that a technician is coming today to fix the unit

Comments

- Handsink stocked with liquid soap, paper towels, and hot/cold running water
- Walk-in cooler measured 11C and prep cooler measured 1C, chest freezers measured -23C, -18C, and -15C
- Soup hot holding (78C) and rice hot holding (74C) measured >60C
- 3 compartment sink with sink plugs available. Manual warewashing method diagram posted, staff able to demonstrate proper manual warewashing procedures
- Surface sanitizer solution measured 100 ppm chlorine in spray bottles
- General sanitation and food storage practices were satisfactory at the time of inspection, however some rodent droppings noted behind washroom toilet. remove droppings and sanitize area.
- General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
- Ice machine not being used at the time of inspection
- Staff hygiene satisfactory at the time of inspection; staff on site did not have a valid FOODSAFE level 1 certificate. Minimum 1 person on duty during operations must have a valid FOODSAFE level 1 certificate.

correction order issued for walk-in cooler unit. ensure that the walk-in cooler and all other cooler units in the facility are capable of maintaining contents <4C at all times. If a cooler unit is unable to maintain 4C potentially hazardous foods must be discarded (if greater than 2 hours) or moved to a working cooler unit.
