Observation (CORRECTED DURING INSPECTION): Low-temperature chemical dishwasher was again, not sanitizing properly. 0 ppm chlorine residual detected at the dish surface after final rinse cycle.
Corrective Action(s): All utensils/equipment to be washed in the dishwasher and manually sanitized in your two-compartment sink using either a 100 ppm bleach solution, or using your multi-QUAT sanitizer solution at 200 ppm. Operator stated dishwasher will be serviced today.

Observation: Buckets of chickpeas was stored in the staff washroom. Clean, unused food-related equipment (woks, bins/containers, trays, etc.) were also stored in the staff washroom.
Corrective Action(s): Buckets were moved out of the washroom. Do not store any food or food-related item/equipment in the washroom! Remove all food-related equipment and store properly in another storage area. If equipment is not needed for operation of this restaurant, remove from facility.

Observation: Mouse droppings noted in the dry storage room on the floor along the walls and around the hot water tank.
Corrective Action(s): Clean and sanitize all affected areas and monitor for any new droppings on a daily basis.

Observation: Low-temperature chemical dishwasher was not working properly. 0 ppm chlorine residual detected at the dish surface after final rinse. Sanitizer was not being dispensed.
Corrective Action(s): Service your dishwasher such that it is capable of achieving 50 ppm to 100 ppm chlorine residual at the dish surface after the rinse cycle. Chlorine test strips must be used on a DAILY basis to monitor. Repeat violation. Note that repeat violations may result in enforcement action(s) being taken.

Comments

- Routine inspection conducted.
- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, paper towels.
- Dishwasher was again, not working properly. Note that repeated violations may result in enforcement action(s) being taken, including the issuance of violation tickets. Operator will have the dishwasher serviced today. **Staff to sanitize equipment/utensils manually in the meantime using 100 ppm bleach solution or 200 ppm QUATs sanitizer solution. See violation codes 302 and 308 above.
- QUATs sanitizer solution available at 200 ppm.
- Coolers measured 4C or less.
- Freezers measured -18C or less.
- No hot-holding at time of inspection.
- Food stored with good separation between raw and ready-to-eat items. *Ensure all food and food-related items/equipment are stored properly protected from any potential contamination. See violation code 209 above.
- Fish was being thawed properly in the walk-in cooler.
- Dry storage area was organized, however cleaning/removal of mouse droppings required. See violation code 304 above.
- General sanitation satisfactory, aside from mouse droppings noted in hard-to-reach areas in the dry storage room.
- Regular pest control in place. Invoices available onsite for review.
