Observation (CORRECTED DURING INSPECTION): Quat spray sanitizier in containers were only at 50 ppm Quat residual (needs to be 200 ppm quats).
Corrective Action(s): Informed operator that he may use either Quat sanitizer or Chlorine based sanitizer (bleach) for all food contact surfaces. Operator prepared bleach solution : mix 1 tsp bleach per 1 liter of water in spray bottle. Operator has test strips on site, required chlorine residual is 100 ppm chlorine residual.

Observation: Some food/grease buildup observed on floors under cooking line (in between cooking equipment). Also, food debris observed in dry storage area on floors (along the walls underneath the metal racks).
Corrective Action(s): Ensure to clean thoroughly and maintain routine cleaning schedule so food/debris does not accumulate.

Comments

Handsink equipped with hot/cold running water, liquid soap, and paper towels. Operator has indicated new paper towel dispensers are on order and will be installed by the next routine inspection.
All temperatures satisfactory:
-Prep cooler across cooking line: 1 deg C (bottom) and 1.3 deg C (top)
-Upright cooler: 4 deg C
-Walk in cooler: 2 deg C
-Walk in freezer: -16 deg C, operator has indicated that the slight ice buildup on freezer fan will be removed
-No hot holding at time of inspection (opening hours)
Chemical dishwasher achieved 50 ppm chlorine residual on rinse cycle at dish level. Test strips available on site
-Permit posted in conspicuous/easy to see location
-Kitchen chef is food safe certified and provided copy of Food Safe certiicate/card
-No pests observed at time of inspection
-Grease trap has been serviced recently but will need to be serviced again to get fully emptied

For next routine inspection, ensure the following:
-Temperature logs available for coolers/freezers, maintained daily
-Grease trap has been serviced
