Observation (CORRECTED DURING INSPECTION): No bleach was prepared in the 3-compartment sink at the time of inspection.
Corrective Action(s): As discussed during the initial inspection, 3-compartment sink must be prepared with 100ppm bleach when in operation to allow for proper sanitizing of equipment and food contact surfaces.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff observed handling money and wiping blue gloves on single use cloth towel dispenser.
Corrective Action(s): When single use gloves become potentially contaminated, the must be changed/discarded. Do not use cloth towels to wiped gloves - may lead to potential cross contamination. Reviewed proper hand hygiene with operator.

Observation: Meat marinade sauce was found on the walk-in cooler door handles and wall of the walk-in cooler. Food debris was found on the door tracks for the display coolers.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times.

Observation: Back handwash station tap does not work properly. Handwash station currently has cold water.
Corrective Action(s): Service handwash station tap to ensure all handwash stations are supplied with hot and cold running water, liquid hand soap, and single use paper towels. While tap is being serviced, staff will use the 3-compartment sink adjacent to the handwash station for handwashing.

Comments

-No chicken being roasted at the time of inspection. Facility makes roast chicken at around 1400 each day.
-Walk-in cooler was at 2C.
-Both display coolers were less than 4C.
-Thermometers present in refrigeration units.
-Customer area freezer was at -22C.
-Chest freezer was at -15C.
-3-compartment sink plugs available in the sink.
-Bleach sanitizer pail tested at 200ppm. Label has fallen off the pail. Ensure pail is relabelled as needed.
-Meat saw and meat cutting area cleaned and sanitized every 2 hours.
-Washroom clean and sanitary. Paper towel dispenser to be replaced.
-General sanitation satisfactory at the time of inspection. Ensure roasters is cleaned after each use.
