Observation (CORRECTED DURING INSPECTION): Bar glass washer rinse contained zero iodine sanitizer.
Corrective Action(s): Serviced during inspection. Ensure glass washer always provides 12.5 - 25pm iodine in sanitizing rinse. Check concentration daily, and replace sanitizer bottle as necessary.

Observation (CORRECTED DURING INSPECTION): 1) Hot water tap had been switched off at back kitchen hand sink.
2) No paper towels were available at bar and servery hand sinks.
Corrective Action(s): 1) Corrected during inspection. Ensure hot and cold water are always available at all hand sinks, in order to provide for adequate grease removal while hand washing.
2) Paper towels provided during inspection. Ensure liquid soap and paper towels are always available at each hand sink. Note: replace paper napkins at servery sink with paper towels (on a roll/dispenser) by tomorrow (1st August 2017).

Corrective Action(s): Ensure this is replaced within 2 weeks (14th August 2017).

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer bottles contained well over 200ppm chlorine (some appeared to be at approximately undiluted bleach concentration).
Corrective Action(s): Diluted to 200ppm during inspection. Note: highly-concentrated bleach is available on site. Ensure sanitizer is diluted using half a teaspoon of this bleach to each Litre of water.

*General sanitation satisfactory. No evidence of pest issues observed during inspection.
*All cooler and freezer temperatures satisfactory. Units equipped with thermometers.
*Temperature logs are kept for walk-in units. Note: start temperature logs today for all other coolers and freezers on site.
*Organization of raw and ready-to-eat foods generally satisfactory.
*Low-temperature dishwasher provided 50-100ppm chlorine sanitizer in final rinse.
*Cooling practices (as described by staff) appeared adequate. No large-volume items cooling during inspection. Ice wands are available - ensure these are always stored in a clean container or in some form of wrapping to protect against contamination.
*Probe thermometers available for temperature checks.
*Note: several unused pieces of equipment (meat slicer, potato chipper, mixer and other items) from previous operation are present on site. Remove any unused equipment within the next month.
*Bar soda guns, ice wells and drink rails maintained in clean condition.
*Follow-up inspection required. Ensure issues listed in report are corrected and maintained on a daily basis.
