203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): One approximate 15L tray of curry stored in the walk-in cooler was measured with an internal temperature of 20C. Staff stated it was cooked one day ago.
Corrective Action(s): Curry was discarded by the staff and adulterated with Quaternary Ammonium chemical by the Environmental Health Officer. Food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours. Cool foods in smaller containers and/or inside the freezer first. Routine stir of food and ice wand can facilitate the cooling process.

Observation (CORRECTED DURING INSPECTION): Yogurt based cream was stored under ambient room temperature measured with an internal temperature of 16C. Staff stated it was take out from cooler 20 minutes ago.
Corrective Action(s): Staff moved the cream back into the cooler. Do not store any potentially hazardous food under ambient room temperature.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food surface sanitizer not readily available at the time. Sanitizer spray bottles measured with 0 ppm of Quaternary ammonium (Quats). It was observed the sanitizer dispenser did not work properly.
Corrective Action(s): Staff manually mixed 200 ppm Quats sanitizer in a spray bottle and sanitize all food contact surfaces in the kitchen.

Observation: 1. Foods were stored in opened metal cans.
2. Ice scoop was stored inside the ice machine handle part in direct contact with the ice.
Corrective Action(s): 1. Do not store foods in metal cans. Transfer the foods into food grade containers immediately once the cans are opened.
2. Store ice scoop away from ice in a food grade container. Correct by: today.

Observation: Rodent droppings noted at the dry storage and equipment storage (where hot water tank is) areas.
Corrective Action(s): Clean the aforementioned area. Continue to monitor for pest activities and follow instructions from professional pest control.

Observation: Gap noted at the bottom part of the back entrance door.

Observation: Sanitizer dispenser unable to dispense 200-400 ppm Quats sanitizer.
Corrective Action(s): Service the sanitizer dispenser to ensure adequate amount of sanitizer is dispensed. Manually mix the Quats sanitizer until dispenser is serviced and dispensing 200-400 ppm Quats. Correct by: Sept 21, 2023.
