Observation: 1. Surface sanitizer in spray bottle registered over 200 ppm chlorine/bleach.
2. Eggs stored at the top shelf in cooler.
Corrective Action(s): 1. Bleach sanitizer solution concentration must not exceed 200 ppm. Use 1/2 tsp unscented household bleach per litre of water to make a 100-200 ppm solution. Ensure all bottles are labelled.
2. Reorganize cooler so that raw animal products are stored at the bottom shelf underneath ready to eat foods (foods that do not require cooking).

Routine Inspection
-Handwashing sink equipped with liquid soap, hot and cold water, and paper towel.
-Dishwasher registered a temperature of at least 71 C / 160 F on plate surface during final rinse. Rinse gauge on dishwasher should reach at least 82 C/ 180 F and hold for 10 seconds.
-Coolers at 4 C or below.
-Freezers at -18 C or below.
-No hot holding at the time of inspection.
-Meals are cooked, cooled, packaged, frozen and then sold on-site. Questions about packaged meals can be asked directly to staff on-site.
-Proper cooling methods observed (ice wand used for soup).
-Temperature logs maintained.
-General sanitation satisfactory.
-A copy of the inspection report to be emailed to Operator.
