Comments

-Kitchen has been de-cluttered and a full clean and sanitize has taken place. Items are being re-organized and placed in bins to ensure they are pest proof. More decluttering today in the storage area of the brewery to allow cleaning -Kitchen was closed yesterday and today by staff to allow for cleaning and decluttering. -Pest control was in today and installed more traps in the kitchen, recommended installed metal baseboard type strips around the perimeter of the storage closet, sprinkler closet and kitchen (outside wall). Steel wool has been used to temporarily plug holes in walls -new chest freezer to be placed in the kitchen to replace the stand up freezer which cannot be repaired (service tech in today). New smaller table to be ordered to allow for proper flow in the kitchen -Pest control will be in Tuesday or Wednesday next week. -Continue to monitor situation, clean and sanitize all food contact surfaces before kitchen opens for the day. Keep all kitchen equipment and food in containers to prevent attracting them.
