**Discussed the addition of a hand sink or converting the utensil spray sink into a dual sink to carry out both hand washing and spraying of dishes.
High temperature dishwasher registered at least 71 C on plate surface during final rinse.
Surface sanitizer available in spray bottle and bucket registered at 200 ppm chlorine.
Operator has taken FOODSAFE Level 1 training - good.
