Observation (CORRECTED DURING INSPECTION): Two containers of ready to eat pickled meat were stored next to containers of raw chicken in the front display cooler.
Corrective Action(s): Person-in-charge moved the ready to eat meat to the walk-in-cooler away from the raw meat during the inspection as a short term solution so that raw meat juices do not drip into the ready to eat meat.

Install a physical partition inside the display cooler to physically separate the ready to eat meat and service utensils for it from the raw meat if you plan to sell it in the front service cooler. Alternatively, store the ready to eat meat in a separate cooler designated only for ready to eat meat. This will help reduce the risk of raw meat juices contacting the ready to eat meat.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels. Note: Bar of soap was discarded by Person in charge during the inspection.
Walk-in-cooler (3.9 degrees C) and front meat display cooler (2.3 degrees C) were at or below 4 degrees C.
Both chest freezers and glass door display freezer were at or below -18 degrees C.
Refrigeration units were equipped with thermometers.
A probe thermometer was available on-site.
100 ppm chlorine sanitizer was available in a labelled spray bottle.
Bleach was available on-site.
2-compartment sink was supplied with hot and cold running water and a drain plug to sanitize food contact surfaces.
Air drying shelving unit was added across the 2-compartment sink.
No signs of recent pest activity were present at the time of inspection.
Screen of backdoor was in place.
Cleaning frequency was reviewed with the Person in Charge for band saw and tongs/service utensils (every 4 hours, and when used between raw and ready to eat food, and after final use).
Invoices were available for recently received meat on September 9, 2019 from A&B Holdings Inc. dba A&S Meat and Poultry.
