302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) Noted reusable wiping cloths to be used to wipe food contact surfaces.
B) Sanitizer spray bottles were stored in a cabinet under the two compartment sink.
C) Noted a stirring spoon to make drinks stored in the hand sink beside the coffee machine.
Corrective Action(s): A) Keep reusable wiping cloths stored in a container of sanitizer to prevent bacterial growth on the wiping cloth. Otherwise, use single use paper towel to wipe if spray bottles are used to apply sanitizer.
B) Ensure sanitizer solution is readily available in each food handling area. Do not store them away.
C) Do not store any food equipment in the hand sinks. Used food equipment should be collected in a bin/container and washed/sanitized in the dishwasher.

Observation (CORRECTED DURING INSPECTION): Noted a reusable stirring spoon in the hand sink beside the coffee machine.
Corrective Action(s): Do not store anything in the hand sink. The hand sink beside the coffee machine can be used as a 'dump sink' to dispose of extra liquids after making a drink order, however, there should be no food equipment put in the sink at any time.

Comments

- Premises is a coffee/tea shop that also sells prepackaged foods from approved sources. Convection oven/panini press on site to toast/reheat sandwiches/desserts for taste.
- Operator has submitted updated floor plans to add a cooler in the storage room - no concerns. The cooler is not on site yet. Ensure the unit is at 4C or less and equipped with a thermometer before storing cold potentially hazardous foods in it.
- Operator may want to do some repackaging of teas for retail sale. No concerns as long as repackaging is done within the food handling area where a designated hand sink is located (ie. not in storage room/areas), the tea is from an approved source and a food safety plan is submitted for approval.
- All hand wash stations had soap, paper towel, hot and cold running water.
- All coolers (undercounter, display case..etc) were 4C or less
- Upright one door freezer -18C
- All units equipped with thermometers
- Good general sanitation. No signs of pest activity noted.
- Ice machine was empty at time of inspection. Ensure scoop for ice is hung on holder and never stored on/inside the ice.
- All foods (sandwiches, parfait, dessert...etc) appeared to be from approved source as per the submitted food safety plans.
- Quat sanitizer at source and in spray bottles 200ppm. Quat test strips available to verify sanitizer concentration.
- High temperature dishwasher achieved 71C (as per thermolabel)
