Observation (CORRECTED DURING INSPECTION): 1) Front food prep area hand sink not equipped with paper towels
2) Hand sink in the back kitchen area not equipped with liquid hand soap and paper towels.
Corrective Action(s): Ensure that all hand washing stations are equipped with hot/cold running water, liquid hand soap and paper towels during food prep operations. Operator supplied the hand washing stations with liquid hand soap and paper towel during inspection.

Observation (CORRECTED DURING INSPECTION): Container of cut carrot being stored directly on the floor by the 3 compartment sink.
Corrective Action(s): Ensure all food products are stored 6 in/15 cm off the floor at all times.
Operator moved the container off floor during the inspection.

Observation: 1) Dining area has been removed from the facility, space is now used for dry storage and supplies.
2) Cardboard being used as mats by the stove and large containers are being stored on top during productions. Operator stated that they use it for employees to stand on and is removed at the end of day and floor is fully cleaned.
Corrective Action(s): 1) Submit an updated floor plan of the facility to district Environmental Health Officer.
Correct by: April 31, 2021
2) Remove cardboard from the floor to ensure that the floor is easily cleanable at all times or obtain proper easily cleanable and non absorbant mats.

Routine Inspection:
- Facility processes Vietnamese hams/balls (vacuum sealed), satay sauces, pickled vegetables, spring rolls and marinated meat (uncooked) for sale on site and distributes locally.
- Vietnamese subs are made to order.
- Retail food products are properly labelled and sealed.
- Hand washing station in the back processing area equipped with hot/cold running water, liquid hand soap and paper towels.
- Front prep cooler and retail cooler at 4C.
- Front retail freezer at -17C.
- Walk in cooler at 4C.
- Walk in freezer and chest freezer at -18C.
- One stand up freezer and one chest freezer not being used at the moment
- 3 compartment sink available for ware washing.
- Bleach sanitizer solution available in spray bottles at all work stations, concentration of spray bottles at 200 ppm.
- Meat slicer and vegetable chopper cleaned and sanitized after each production.
- No hot holding of food products.
- No pest activity noted during the inspection.
- General sanitation of facility is satisfactory.
- Permit posted in visible location.
