Observation (CORRECTED DURING INSPECTION): Deep fryer batter observed being kept at room temperature. Ice water slurry bath set up at time of inspection
Corrective Action(s): Purchase ice cube trays in order to have sufficient ice available to make ab ice water slurry bath as discussed

Observation (CORRECTED DURING INSPECTION): Dishwasher initially only dispensing approx. 40ppm in final rinse. Once old chlorine was discarded and new chlorine container installed and unit primed a residual of approx. 75 ppm chlorine detected in the final rinse.
Corrective Action(s): Re wash all utensils as instructed.
Ensure you are properly measuring and recording in the daily log the concentration of sanitizer in the final rinse. This demonstrates you are doing your due diligence as an operator.
