Observation (CORRECTED DURING INSPECTION): The following food products were observed in the upright reach-in refrigerator located near the dishwashing area. Note: Refrigerator ambient temperature at 12 to 14 degrees C; food product internal temperature at 12 degrees C.
- Dairy (sour cream, cheese)
- Sauces/salsa that were labeled either "keep refrigerated" or "refrigerate after opening" (products opened)
Corrective Action(s): Discarded. Repeat violation. Ensure cold potentially hazardous food is maintained at 4 degrees C or less. Refer to previous routine health inspection report dated August 2, 2023 for details.

Observation (CORRECTED DURING INSPECTION): Repeat violation. Dedicated hand washing station located in kitchen (near dishwashing area) was obstructed by two large pots with used oil and the back door (propped open).
Corrective Action(s): Back door closed, pots removed. Refer to previous routine inspection report for hand sink requirements. Future repeat violation(s) may result in enforcement action.

Observation (CORRECTED DURING INSPECTION): Knives stored in space between prep cooler and counter.
Additional knives also stored in sanitizer solution.
Corrective Action(s): Repeat violation. Knives removed from space between prep cooler and counter. Knives removed from sanitizer. An ice bath was set up (no sanitizer; ice water only) for storage of knives. Further repeat violations may result in enforcement action.

No improper cooling practices observed at time of inspection (cooling of cooked food).
Sink and surface sanitizer measured at correct concentration as per manufacturer label (in labeled spray bottle and from dispenser).
Low temperature dishwasher measured 100 ppm chlorine at utensil surface.
It was stated that thermometer for cooler located near dishwashing area is to arrive from supplier tomorrow.
It was stated that staff have registered for FOODSAFE Level 1 (or equivalent). Email proof of registration to the district Environmental Health Officer.
