205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Foods inside the preparation cooler were 15 degrees Celsius.
2. Whole, shelled eggs stored at room temperature.
Corrective Action(s): Potentially hazardous foods (e.g. eggs, meats, and cooked carbohydrates) must be stored at 4 degrees Celsius or less. A large pot of raw chicken was found in the preparation cooler, that manager indicated was prepared the evening before.
1. Due to the warm temperature of the preparation cooler, the raw chicken and cooked pasta shall be discarded. Operator instructed to discard these foods at time of inspection.
2. Eggs shall be stored in a cooler at 4 degrees Celsius and brought out only when in use. Operator instructed to move the eggs from the counter to the small fridge at time of inspection.

Observation: Hand wash station in the bar area is not equipped with paper towels.
Corrective Action(s): All hand sinks shall be equipped with paper towels (in a holder/dispenser) for drying hands after hand washing. Bar hand sink was stocked with liquid soap. In the meantime, provide a stack of napkins in a container beside the hand sink for drying hands.

Observation: Foods stored in the inserts along the top of the preparation cooler were found uncovered.
Corrective Action(s): Foods in the inserts must be covered to prevent contamination. The foods in the inserts were mostly vegetables.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings found in the back storage rooms, under the sinks in the kitchen and in the bar area (under counter and on top of condenser for cooler).
Corrective Action(s): Clean all mouse droppings and sanitize the affected areas. Monitor everyday for rodent activity and immediately clean up any droppings that are found. Mouse traps were found throughout the premise.

Observation: Sofa was found in one of the back storage rooms where mouse droppings were found.
Corrective Action(s): Manager indicated the sofa is used by staff during breaks. Due to the presence of mice, the sofa shall be removed from the premise as it can serve as a harborage area for mice.

Corrective Action(s): Please have the preparation cooler serviced/repaired and ensure it is capable of maintaining foods at 4 degrees Celsius or less.

Comments

General observations:
The small fridge was found to be 4 degrees Celsius or less.
The chest freezers were -18 degrees Celsius or less.
Fridges and freezers were equipped with thermometers.
Kitchen hand sink was stocked with liquid hand soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation (except as noted above) is satisfactory.
Low temperature dishwasher had a chlorine sanitizer residual of at least 50ppm after the final rinse.

Notes:
The 'coca-cola' cooler was not in use (because it is out of order) at time of inspection and manager indicated this unit will be removed from the premises. A new commercial deep fryer was found in the kitchen at time of inspection, and manager indicated once this unit is properly hooked up they will use it instead of the two table-top domestic-style deep fryers. Manager indicated that the cooler will be removed and commercial deep fryer hooked up in approximately 2 weeks.
