Observation: In-use utensils are only being changed out once a day, at the end of the shift.
Corrective Action(s): Discussed with the Deli Manager the importance of changing out all in-use utensils at least every 4 hours, as needed if overly soiled and at the end of the day. This prevents bacterial growth on the utensils as it is being constantly used.

White mold noted on the frost buildup on the lower wall in the walk-in cooler.
Corrective Action(s): Defrost the walk-in cooler whenever buildup occurs and remove any noted mold buildup.

Routine inspection conducted today:
Handwash stations were accessible, equipped with hot and cold running water, liquid soap and paper towel.
200 PPM QUAT detected in a sanitizer spray bottle. 400 ppm QUAT detected from the wall mounted QUAT dispenser. QUAT test strips available.
All refrigeration units, including cold display units, were at ≤ 4C.
Soup and rotisserie chicken were hot held at > 60C.
No signs of pests noted at the time of inspection.
Utensils in the storage bins were stored in a sanitary condition.
General organization and sanitation noted satisfactory.
