Observation: 1) Sanitizer solution on front counter was at 50 ppm chlorine. Ensure sanitizer is 100 - 200 ppm chlorine at all times and change the solution more regularly.
Corrected: New sanitizer bucket solution made, tested at 200 ppm.
2) Reviewed manual dishwashing with operator, he stated they do not do a sanitizing step, only wash and rinse. Proper dishwashing must be done with all steps being done with wash-->rinse-->sanitize with bleach and water for at least two minutes. Follow the sign posted.

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser was in the corner away from the handsink making it not readily accessible. Ensure handwash stations are fully stocked with hot and cold running water, liquid soap and paper towel that is easily accessible.

Observation: Only two tongs available for bulk candy. Observed a customer who grabbed "sour key" candy out of bin with his hands. Discard top layer of "sour key" candy and ensure each bin has own set of tongs.
