Observation (CORRECTED DURING INSPECTION): Two drawers in a hot-holding unit contained meats that measured between 54C-56C. Staff noted that meats are cooked, stored in unit, and undergo a second cook step.
Corrective Action(s): Adjust temperature of hot-holding unit to ensure hot foods are stored at or above 60C. Hot foods are to be maintained at or above 60C to minimize bacterial growth.

Observation (CORRECTED DURING INSPECTION): Handsink in back area had hot/cold running water and single-use paper towels. The liquid soap dispenser was empty. A sign noted that is was out of order.
Corrective Action(s): Repair liquid soap dispenser. Fully equipped hand washing stations are important for proper hand hygiene and sanitation. In the meantime, use hand soap pump or use handsink in front area.

Comments

Temperatures:
-Prep cooler storing cold foods at or below 4C. Internal temperature of sauce in top insert measured at 2C.
-Undercounter cooler in cooking area: 3C.
-Undercounter freezer in cooking area: -14C (food is frozen).
-Hot-holding unit (2 out of 4 inserts in use): 62C
-Walk-in cooler: 4C
-Beverage cooler: 6C (no potentially hazardous foods stored here)

Food Storage:
-Food stored in cooler units are covered and protected from contamination.

Sanitation:
-Handsink in food handling area is fully equipped with hot/cold running water, liquid soap, and paper towels.
-Quats sanitizer in front area measured at 200ppm. Sanitizing cloths stored in sanitizer buckets.
-Operator demonstrated adequate knowledge in 3-manual dishwashing. Adequate quats sanitizer available for sanitizing step.
-Ice machine is clean.

Additional Comments:
-General sanitation is good.
-No signs of pest activity.
-Temperature logs are available and in use.
-Site does not use external storage in the mall.
-Minimal grease build-up observed on grease vents.
-Per staff, has valid FoodSafe Level 1 certificate. Ensure copies are kept on site.
