Comments

Hand wash stations easily accessible and equipped with liquid soap and paper towels. Quat sanitizer measured 200 ppm (in buckets and spray bottles). Walk-in cooler registered at 1-3 deg C. Other coolers were at 2-4 deg C. Line freezers were at -12 to -18 deg C. Hot holding for gravy, chicken strips and pizza was above 60 deg C. Chicken wings hot held for 30 mins. (on Timer) and then discarded. Temperature log was available and up to date. General sanitation was good. Floors and counter tops in the concession was clean. Pest control in place - extra blue lights installed for flies. Currently not an issue in fall/winter seasons. Staff observed to be wearing clean aprons and hair nets. Food Safety Plan for wings were available on-site.
