Observation: Sanitation: Unused items being stored below/under equipment (sinks, etc.) Cleaning of hard to reach areas can be improved. Exterior Compactor storage: Food/debris noted below/under equipment. Unused/damaged items noted.
Corrective Action(s): Ensure routine cleaning of all "hard to reach" areas in rear storage. Effort is to be made to keep all items stored off of floors. Any/all unused items are to be removed to free up space. Cleaning of exterior/rear compactors is to be conducted. Monitor odor/garbage debris on a regular basis.

Comments

- Temperature Control: Monitoring is being conducted on site. No concerns noted this date.
- Manual Dishwashing: 4 Step Method (Quats): Ok.
- Mechanical Dishwasher (High Temp - bulk bin) - Ok.
- Ensure all food contact surfaces are washed and disinfected after use or on a timely manner. (ie: 3-4 hours) All implements are to be kept stored in a sanitary manner. (ie: knife storage holders - upper shelves)
- Wiping cloth/spray bottle storage: Ok.
- Use 200 ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Stock rotation discussed. (ie: Best before/expiry dates) Blast chiller storage discussed. Food items are not to protrude beyond the shelving supports.
- Sanitary Facilities: Ok.
- Sanitation: Refer to Violation Notes.
- Chemical Storage: Ok.
- Staff illness/Hygiene: Discussed..
- Structurally: Ensure all surfaces are kept in good repair.
- Pest Control: An active pest control program is in place. Monitoring is being conducted. Latest report reviewed this date. As discussed, Sanitation is part of an effective rodent control program.
- Bulk Water dispensing self serve unit and Coffee Grinder is to be cleaned on a regular basis.
- Garbage, Recycling and Composting Storage: Ensure all food/debris is being stored in covered, rodent proof bins.
