Remove the droppings in the area and disinfect using a 100 ppm chlorine bleach solution (1/2 tsp bleach to 1 liter of water) Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Walk-in cooler's ceiling is molding and requires replacement. Sliding door cooler 4 degrees C. Monitor cooler daily to ensure it is below 40F food freezer (-20C), chapman's freezer (-29C), nestle freezer (-19C), and magnum freezer (-25C) measured < -18C General sanitation was satisfactory Bulk candies have tongs in adequate quantity besides violation above, no other evidence of pest activity noted in the facility *walk-in cooler maintained at 8 degrees C. Operator does not store any potentially hazardous foods inside.
