Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
100 ppm chlorine sanitizer was available in the third compartment sink.
3-compartment sink was supplied with hot and cold running water.
200 ppm QUATS sanitizer was available in a bucket with wiping cloths.
No signs of recent pest activity were present at the time of inspection.
Food was covered in storage areas.

Refrigeration units were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Food was not being hot-held at the time of inspection.
Hot-holding units were being pre-heated during the inspection.
A probe thermometer was available to monitor the internal temperatures of cooked food (at or above 165 degrees F) and hot-held food (at or above 140 degrees F).

Note: A probe thermometer was not available on-site to check the internal temperature of food (e.g. rice) being cooled. Please obtain a probe thermometer to monitor the temperatures of food through the cooling process (60 degrees C to 20 degrees C within 2 hours and then 20 degrees C to 4 degrees C within 4 additional hours); Correct within 2 weeks. Person in charge informed her supervisor to order a probe thermometer during the inspection. Please contact the district Environmental Health Officer for a follow up inspection.
