Currently using bleach dip for dishes. Bleach dip set up at time of inspection, 100ppm residual
This is a temporary solution to be used for only a couple of days. Have the dishwasher serviced as soon as possible.

Operator adjusted booster temperature during inspection, however, dishwasher is not operating as designed.

If the dishwasher will be not in operation for longer periods then you will have to switch to paper plates/cups etc until it is repaired.
