Observation: Walk in freezer observed with substantial ice build up on the compressor. Loud fan noise emanating from the compressor. One fan unit observed not turning. Interior temperature testes at approx -7c.
Old wall brackets still observed in place where the salamder unit used to be
Could not locate chlorine test strips for testing the final rinse on the glasswasher
Corrective Action(s): Contact technician to have compressor unti serviced. Temperature should be approx -18c when working properly.
Remove old wall brackets as they impede the work space
Ensure chlorine test strips are readily available as discussed

***Gap in monitoring logs observed for glasswasher monitoring. Ensure logs are recorded daily when in operation
Wall damage repaired at entrance to kitchen

Fire suppression nozzle height adjusted in exhaust canopy
Dishwasher at 74c (At plate level). Soap dispensed into wash cycle
Walk in cooler at <4c. Processed food items labelled
Ice machine is clean. Scoop stored in a container adjacent to the unit and both are washed at the end of the day
Quat sanitizer in spray bottle tested at approx 300ppm. Quat test strips on site
